Our Wine Story

Drayman's Brewery & Distillery, a family-owned establishment renowned for its artisanal brews and spirits, found a kindred spirit in Marald Boutique Winery named after it's founders, Rynald and Marjanne. The partnership is more than a business venture; it was a convergence of shared values, mutual respect, and a deep love for red wine. Drayman’s has always dreamt of expanding its horizons. The dream took a delightful turn when we crossed paths with Marald boutique wines. The collaboration blossomed into a symphony of flavours where the rich, robust and full-bodied wines of Marald found a harmonious balance with the bold, innovative brews of Drayman's. Together, we produce high quality, award winnig wines. The result is a collection of wines that are not only a testament to our skills, but also a reflection of our shared passion for excellence. Nestled far from the traditional wine-making regions in the Cape, lies Marald Boutique Winery. Striving for world class wines, regardless of geographic constraints. The label of Marald tells a story through a unique image of sparrows soaring over majestic mountains. These Sparrows, symbolic of migration, represents the journey of the grapes from their original vineyards in Stellenbosch, to our Winery here in Pretoria. Just as a sparrow migrate with the changing seasons, Marald’s winemaking process begins by transporting the finest grapes from Stellenbosch to Pretoria - an area that traditionally wouldn't be considered for red wine production. This migration is more than a physical movement; it symbolizes the winery's philosophy of adaptability and innovation. The grapes, upon arrival, are meticulously processed, fermemted and aged in French oak casks, infusing them with the unique terroir of their new home. The result is a wine that carries the essence of its origin while being shaped by the distinct character of the Highveld.

The Process

Our grapes are sourced from the prestigious Stellenbosch region. Harvested at the optimal sugar levels (balling), they are handpicked early in the morning to ensure the best possible conditions. The grapes are then carefully packed and cold transported overnight to our winery in Pretoria. Upon arrival, the de-stemming and crushing process begins immediately. To enhance flavor and color extraction, half of the must undergoes a carefully controlled cold soak for five days before fermentation begins. This pre-fermentation technique, known as "cold soaking" or "cold maceration," allows for the extraction of vibrant color and rich flavors from the grape skins. The remaining crushed grapes (must) are returned to cellar temperature, at which point precisely measured amounts of cultivated yeast and nutrients are added to initiate fermentation. During the primary fermentation phase, we perform three manual punch-downs per day to ensure the process completes within 18 days. After primary fermentation, the wine is hand pressed, re-racked, and malolactic fermentation is initiated to further refine the wine's profile.

Premium Shiraz 2022

Elegant, Full bodied - Gold Medal Winner

Indulge in the timeless allure of red fruits - including raspberry, plum, and cherry, complemented by the spicy character of Shiraz which dominates the nose. A subtle hint of jammy sweetness and the inviting aroma of fruit cake follow suit. Matured to perfection after 18 months on French oak.

Ruby brick. Dark berry fruit and jam on the nose. Spicy and leathery on the smoky and toasty palate with a hint of violets and perfume on the dry finish.

Shiraz 2022

Fruity, Medium bodied - Gold Medal Winner

Experience a fruit-forward sensation in every sip of this wine, where the essence of red cherry, black currant, and raspberry takes center stage. Delve deeper to discover subtle hints of dried cranberry and clove that add complexity to the flavour profile.

Ruby garnet. Spice and fennel on the developed nose. Liquorice and black forest cake on the aniseed and leather palate. Tea leaf on the complex and layered finish.

Merlot 2021

Delicate Medium bodied

This wine is a deep red colour with long stained tears. Characteristic of Anise and violet picked up sensorially, followed by fruity aromas of raspberry, black cherry and plum. Delicate notes of cedar and a subtle smokiness emerge as elegant secondary aromas, adding depth and complexity to the bouquet..

Fruity aromas detected on the nose seamlessly carry through to the palate, culminating in a smooth, velvety texture and a lingering finish.
